5 More Super Sunday Recipes

We cant let Super Sunday pass without another one of our classic recipe posts. I didn't get to cook as much during the season this past year as I had others but I still have five worthy recipes for your party. A couple are original and the others are tried and tested. As far as the game goes, I said Broncos would win it all before the season started and I'm sticking with that. Should they take the confetti shower on Sunday I will have gone 2-2 in predicting football champions this year as I had Florida State winning the BCS. I just hope it's a game for the ages because that's what it looks like it's going to be, on paper anyway. Lets hope the weather holds up and both teams are able to play at their top level. Should be a dandy.

Chicago Style Deviled Eggs

I came up with these one day out of the blue and they turned out alot better than I expected. If you like Deviled Eggs and Chicago style hot dogs, no chance you dislike these. I just mixed mustard into the yolk and sprinkled celery salt into that. The weiners were diced then sauteed and every other standard Chicago stye hot dog topping is in there as you can see from the picture.

Sausage Stuffed Peppadew Peppers

These always go quick at any party they're served at. You can get everything you need to make them at most any Mariano's location. Loose Italian Sausage, chopped garlic and shredded Parmesan joins chopped cremini mushrooms in the skillet. That mixture is stuffed into a peppadew pepper (available at the deli counter) and they bake for 20 minutes. I loosely follow this recipe HERE.  

Note: Loose sausage doesn't get that fine so you may need to whip out the kitchen scissors and throw your cooked crumbled sausage in a cup to break it down even further.

Fried Giardineria and Banana Peppers

Why don't we see either of these on more bars and restaurant menus? It's such an easy and cheap finger food to make that places could make a killing selling snack plates of it for $4/$5 an order. I love them both but actually prefer the fried banana pepper rings (the bottled variety). Someone needs to add those to a burger. The fried Giardiniera I've been making this season is always a welcome addition to the days platter. Every neighborhood bar with a deep fryer in back should offer this on the house opposed to popcorn.

Mussels with Pancetta

Nothing gets the house smelling quite as fragrant as steamed mussels in white wine. One of the simple joys of the kitchen that many might find intimidating at first but once you make your own batch it's hard to pay $15 for 1/4 the amount at some trendy restaurant. I've found adding a cup of shrimp stock (I keep some frozen ones in the fridge) just boosts the broth to another level. Stuff like diced pancetta, leeks and garlic go great with the white wine shower.

Toasted Garlic Beef Sandwich at Home

Here's a step by step guide to making a toasted beef sandwich, an idea I got from someone who was explaining a sandwich they loved at a place now gone. Here's how I remade his description of it. First up you have to head over to Pop's Italian Beef and buy an order of their catered beef (minimum two pounds). You can use some random brand from the grocery store but Pop's is one the cities best Italian beef slangers so I'm willing to take the ride. It's nice to make these one night and a beef with hot the next. They give you everything you need. I turned the French rolls supplied into garlic bread. After that I layered the beef from the bag onto the bread. I then and added a row of sport peppers and topped that with cheese. Put it in the oven and bake until the cheese melts. Serve with a cup of the gravy (au jus) on the side.

Chicken Gyros

Last but not least is a pretty good chicken gyro, or shawarma if you want to call these that. Either way, they're an easy to make eat for a large party, and they taste great.

Ingredients (Double, Triple Etc for larger groups)

1 lb Chicken (Thighs or a mixture of them and breasts)
4 Cloves of Garlic, chopped
3 TBSP Lemon Juice
2 TBSP Olive Oil
2 TBSP Red Vinegar
2 TBSP Dried Oregano (Greek Preferred)
1 TBSP Salt

Directions: Combine everything but the chicken into a bowl and stir together. Add chicken into a ziplock bag and pour the marinade into it. Let sit in fridge for as long as you can (up to 12 hours). When ready, grill the chicken meat and simply cut each piece as if you were slicing it off of a spit. Serve with warm pita bread, sliced red onion, tomatoes and a tzatziki sauce of your choice, I like one made with dill.

5 More Super Recipes

It's Super Bowl weekend and usually I have a big special for it with all sort of recipes but not this year. However I do have five fast ideas that I found myself while searching the web for dinner ideas. All of these dishes also happen to be very hearty so I wanted to make sure I shared them now as we head down the stretch with winter. You cant go wrong with any of these and they're a good example of why I like to look further than the typical recipe websites. As for my Super Bowl Prediction. A Harbuagh will win.

Chicken and Tasso Stew over White Rice

February typically has the type of weather that makes me want to eat something Cajun/Creole. Not that there's ever a bad time for this wonderful style of food but theres something about filling the house with pungent aromas on a cold rainy day. The Super Bowl is also down in New Orleans this year so we're starting with something good from the Bayou.

I loosely followed  recipe online after I needed to use some frozen chicken strips from the freezer and came away with one that will go into my regular winter rotation. On top of deciding to serve this over white rice I added spices to make the Creole seasoned chicken strips. This is quick and it's the good stuff.

 Spicy Asian Slow Cooker Kalbi Ribs

This easy recipe will have the house smelling great and is perfect for a Sunday. Some places sell Korean style beef kalbi ribs cut thin and this recipe is a real winner if you ever want something easy but a whole lot better than spaghetti and sauce from a can. Along with the recipe I found I also added some sauteed veggies and added some seared scallops to the plate. An Asian style Surf & Turf. I'll be making these again.

 Stroganoff and Spaetzle

This one came as a result of not wanting to leave the place on a cold and rainy day. I had a package of spaetzle as well as everything else needed to make a mean take on this classic comfort dish. I never thought of substituting spaetzle for egg noodles in this old school Russian dish but its great and I'll make it again the same way some day soon. Razor Family Farms shared their wonderful recipe for this.



Lasagna Enchiladas

This was a pretty simple recipe that just came to my head, I'm sure it's been done before. However I'll put this against the rest as I put love and quality ingredients into it. Well quality ingredients anyway. I did   homemade red sauce with cherry tomatoes, roasted garlic, diced bell peppers and onions and the Italian sausage from Tenuta's in Kenosha.

What you'll need + Sauce

Just cook the sausage on a grill until cooked thru and while doing so boil some lasagna noodles in a pot. Once noodles are ready, remove and cool down a bit. Add a mixture of Ricotta (10 oz) and shredded mozzarella (1/4 cup) and Parmesan (1/4 cup) into a bowl and mix it together. Spread the mixture evenly onto each noodle and slice the sausage links in half. Roll half of each link up into the noodle and place into a baking dish with the bottom layered in sauce. I made this the night before and baked it the next day.

Note: Two Noodles needed for every piece of sausage cooked

Sour Cream Chicken Enchiladas

I loosely followed the Homesick Texan's recipe. I've used some other recipes from her featured upthread as well. No Tex-Mex isnt fancy food but it's great for tailgates and gamedays. I'm not afraid to admit I'm a fan of this food. A couple things I switched up on her recipe were the prep of the tomatillos which I roasted over lump charcoal instead of under a broiler. This added some deep flavor depth to the sauce.

So anyone here in Chicago planning on taking the ride down to Indy during Super Bowl Week? What's that you say? You don't have tickets, nowhere to park, no hotel to stay? Looks dope huh? You can bet whatever you plan on putting on the Pat's or Giants that it is. We've been to Indianapolis twice now leading up to the Super Bowl and I gotta say it's a fun place. That little pelican wasn't lying when he said "there's more than corn in Indiana" Especially the weekend of Super Bowl 46. Its going to be three days of madness with all sorts of special guests including the folks at Coast 2 Coast Cuisine. Come for each day or stop by on one of them, it doesn't matter, the only thing we care about is that your Super Bowl weekend is a memorable one. I've done an entire week down at the Super Bowl and anyone else who has knows its a madhouse. Many places are rented out for VIP parties while others have lines down the block and some charge upwards of $500 just to get in. Good luck getting a drink or two when you do. So why waste your time with all that? We'll be living it up large in the parking lot while consuming all the food and drink you can with all sorts of other special events planned and games to play along with people to meet. You never know who might stop by. As far as the food, were not talking frozen beef puck patties and Oscar Meyer wieners. You'll be chowing down on pulled pork, brisket, Championship Chili, sausage from both Chicago and places far away like Texas etc

Annie's Jamaican Beef Patties

I recently got to spend an early afternoon learning how to make an old favorite of mine. Jamaican Beef Patties first won me over when I visited the island for the first time. The islands signature and most well known dish is jerk chicken but the patty plays an everyday roll in most locals diets. You can find the pastry's, traditionally filled with spiced ground beef, almost anywhere from the side of the road to a restaurant or the grocery store and of course bakeries too. They're quick, ready to eat and cheap and as long as you like a little kick, taste great. However the best beef patties I have ever had come from a beautiful Caucasian baker from the Bronx. Annie is her name and you may have had your soups at Toons.

When I first tried Annie's Patties I was blown away. Never expecting that that there day I would taste the islands dancing the day away to dancehall in my mouth. Her miniature Patties came to be, not from a trip to the island, in fact Jamaica is still on her and her hubby's "to get too" list. They were made one day when she wanted to go back in time to grade school when Jamaican beef patties were served in the Bronx school cafeterias for lunch. Since she was already an amazing baker it took no time to perfect the beef patty. Lucky me! I got to learn how. Ja Live! Paaaaaty YEAH!

I have zero to little experience when it comes to baking. I've never had a big sweet tooth and it's more of a science than it is freestyle cooking. However if I get the chance to learn how to make one of my favorite treats, which includes spicy beef, then I'm willing to learn some tricks of the dough and oven trade to do so. It was actually super smooth and I may even go as far to say I could do these again without the help of the Pattie Queen, but probably not. If you have any prior experience baking and dough making you shouldn't have a problem with these top notch treats. So first up is the filling. Traditionally a spiced ground beef mixture is used and that's what I like best but the filling options are almost endless.

Ingredients for Ground Beef Filling
(Yield 75 mini Patties)

- 3 lbs ground beef
- 1 bunch of cilantro stems
- 6 stalks of green onion (finely chopped)
- 4 TBSP flour
- 1 TSP curry powder
- 1 Cup water
- 1 Cup Jerk Paste (Mild or Hot depending on preferred spice)


Essentially what you'll need

Directions

1) Start off by adding a little oil to the pan and then browning and draining all of the ground beef. Use a potato masher or something like a wooden spoon to crumble it into very a fine consistency.

2) When drained and crumbled add in the curry powder, cup of Jerk paste, cilantro stems, flour and then the cup of water and the green onions. Mush it all up until it blends as one and then cook it a little longer, browning it and set aside to cool once done.

Next up was the dough. this is where I had no clue what was going on but I did get my hands dirty and learned some things that will come in handy next time I'm baking up some meat filled pastries. The dough is best made ahead and left to sit in the fridge for a little bit. That's what we did and the first batch was ready to be rolled while I made the second batch with her from scratch. Lets check out a step by step look at how it was done.

Ingredients for Pattie Dough
(Yield 75 mini Patties)

- 8 Cups Flour
- 1 TBSP Curry powder
- 1 TSP Salt
- 1 pound shortening
- 3/4 to 1 Cup of Water

1 Pack Goya
1 TSP Turmeric

Directions

1) Get your hands dirty and slowly start mixing the ingredients together until you have a nice ball of dough with the right consistency. Practice makes perfect. Add the water slowly allowing yourself to see and feel the consistency as you go, you cant take any out but you can always add more. Once ready give yourself a nice little space and sprinkle the area with flour and roll your dough.

2) Start from the middle and gently roll out from each side until its nice and thin. Flip the dough over each time you roll the pin from the middle out along each side.

3) When the dough is stretched right to the point where any more and it'll pierce thru, your ready to cut it. Depending on what size you want them, take a cup or round cookie cutter and make circles of dough. Take the leftover dough and roll it together and repeat.

4) Take the beef filling which should be at room temperature and also clumpy. This ensures that none falls out when biting into them, the beef sticks together. Use a small spoon to scoop out a mini meatball size worth and place each ball into a circle of dough as seen below.

5) Next your going to take the circle of dough with beef in it and fold them over. Use water to tighten them closed and then take a fork and press down making sure there are no air holes. Its gets easy after going thru a few. Make sure they're tightened otherwise they open during baking.

6) Place your patties on a baking sheets with parchment paper and bake at 365 for 12-15 minutes (until golden brown) then serve. These make a great Super Bowl gameday snack and can be made ahead of time and reheated easily. I promise you wont have anyone that eats just one.

Please Note: Yes these will be the best beef patties you have had. I've had many and the ingredients here mold together perfectly and I love making them a little smaller so you can go thru a few. Do stay tuned, if like me, your scared of baking, you never know, a truck or store slanging these by the bag could come one day soon. Perfect munchies food.

Super Recipes for Super Bowl XLV

If you come looking for Super Sunday recipe ideas you need look no further. Despite conference championship Sunday being tough on me and Da Bears and having to listen to idiots question our QB's toughness, I am as always excited for Super Sunday. In the 3rd annual chibbqking Super Recipe post we go with a regional feel and cook up some popular recipes from different parts of the country including a few straight outta Texas where Super Bowl XLV will be played.

Ingredients

- 1 Large container of Bush's baked beans or enough to feed your party
- 1 bottle Open Pit bbq sauce
- assortment of tubed meats (I use Oscar Meyer wieners and elk sausage)
- 1/2 to a whole slab of bacon
- diced peppers, onions and garlic
- BBQ seasoning, Worcestershire, mustard for seasoning

Directions

1) Start off by sauteing the bacon pieces (in the pan you'll use to make the beans) until crisp. Remove them and let dry on a paper towel and then add the peppers and onions and saute for 5-7 minutes and then add garlic and the Worcestershire for two more minutes. Remove the trio and add any other diced meats you are using like the hot dogs and sausage and cook them until they are browned.

2) Once everything is removed start off by pouring the can(s) of beans into the pot. Add in the trio of veggies along with the diced meats but hold on the bacon. Mix it together and then add in the bottle of Open Pit until the brew reaches the right texture which is stew like. Once you got that good to go add in the mustard (by the TBSP) and BBQ seasoning and adjust to taste.

3) Set heat to low and let simmer for two hours. Serve when ready.

Tex-Mex Chorizo Casserole

I made a Mexican casserole inspired by Homesick Texan, which is a great Tex-Mex blog, perfect for Sunday's and giving ideas for what to make for the Super Bowl.

What I did

I took three tubes of Mexican chorizo and cooked it in the pan until crispy. Once done I removed and threw in a whole sliced medium onion and a couple chopped fresh jalapenos and some chopped garlic and sauteed that up until done. I then took them out and threw 2 cans of drained hominy into the pan along with about a half cup of chopped cilantro, half a container of sour cream, half cup of shredded Mexican blend cheese, the chorizo and onion/pepper/garlic mixtures and the juice of a lime.


Mix it all together in the pan


Layer it into a baking dosh and top with more shredded cheese


Bake @ 400 until done


Serve with plenty of tortilla chips and tater tots

Asparagus Roll Ups

These little app's are great for gameday and getting started, we've been enjoying them over Thanksgiving in my family for years. My cousin is the mastermind behind these simple but succulent snacks. I always thought they would make a great Super Bowl munching snack, perfect for a little bite to pass around before the game. Check them.

Ingredients

- a loaf of cheap white bread like Wonder
- package of cream cheese
- half slab of bacon
- bundle of asparagus
- butter

Directions

1) You need to start out by frying up the bacon until nice and crispy. Let it cool down on some paper towels on a plate and then crush it up into tiny little pieces in the paper towel and set aside.

2) Remove the crust from the slices of bread and then layer the cream cheese onto each slice. Sprinkle them with the bacon bits and then layer a roll of asparagus on each piece and roll them up. Cut them into bite size pieces, usually about 2-3 per roll. Melt a half stick of butter in the micro for 10 seconds and then coat the rolls with the melted butter and put them under a broiler until browned.

3) Pass them around and enjoy da game

Shrimp & Chorizo Skewers

This recipe was concocted by me over the summer after I got quite a few sausages from my uncle from when he went down to Dallas. There's a great grocery chain that every region should be fortunate enough to have down there. It's called Central Grocery and they have some great products that more places should carry. One of those things I got was some Spanish chorizo sausages which after a little research online had me making these skewers with them in no time.

Ingredients

- 12 large shrimp
- 1 tablespoon harissa paste
- 2 Spanish chorizo sausages
- 12 fresh bay leaves (optional)
- 1 tbsp olive oil
- 12 short wood or bamboo skewers, soaked in water

Directions

1) Rub the harissa paste over your peeled and deveined shrimp evenly and set aside. Slice the chorizo into 1/2-inch thick slices. Place one chorizo slice into the crook of each shrimp and thread onto a skewer, like those seen above. Add a bay leaf to each skewer and refrigerate until ready to cook.

2) Preheat the grill or grill pan to medium-hot. Brush the skewers with a little olive oil and cook for 5-6 minutes, turning once, or until the shrimp are translucent and the chorizo cooked through. Enjoy immediately.

American Chop Suey

Well we have no New England Patriots in the Super Bowl this year, and that's fine by me. But I'll admit, I did have a recipe ready just in case they made it. American chop suey is a popular regional eat out in the New England area, and another thing I'll admit, I enjoy it. It's just a combo of macaroni with a ground beef, sauteed peppers, onions and tomato mixture with everyone having their little tweaks they use to make it. Good winter comfort food is what it is and the fact it can be made easily and serve a crowd makes this great gameday grub.

Ingredients (12)

- 3 lbs ground beef
- 2 onions, 4 bell peppers, 5 sticks celery, 3 garlic, all diced down
- 1 package elbow macaroni
- 1 can chicken or beef broth
- 2 cans diced tomatoes (I use fire roasted)
- 1 can tomato sauce
- seasoning like salt, pepper and whatever else floats your boat

Directions

1) Start off by cooking the elbow mac according to the package. While cooking the pasta, brown the ground beef in a oiled skillet until cooked thru. You want to break it down like taco meat. Add a little seasoning and set aside in a bowl when the meat has cooked thru.

2) Add more oil to the skillet and throw in the peppers, onions and celery and cook until translucent and then add in the garlic for the last minute. Stir in the tomatoes, the sauce and broth, cooked macaroni, ground beef and seasonings and then cover the skillet or pot and let it simmer for 20 minutes.

3) Let the pasta sit in pan and people can serve themselves out of it.

chibbqking's Baked Mostaccioli with Sausage

It's a damn shame da Bears wont be in Super Bowl XLV but I had a recipe ready just in case. Throughout Chicago and it's Italian restaurants and pizza joints you will find baked mostacholi on the menu. It's a Chicago thing, everyone enjoys it and I remember some catered Super Bowl parties from my youth where they had this classic American pasta dish was served.

Ingredients

- 1 lb Italian sausage, grilled and sliced
- 1 green pepper, diced
- 1 onion diced
- 1 large pot of spaghetti sauce, homemade or bought
- 1 cup chicken broth
- 1 package of Mostaccioli pasta, cooked, drained and tossed with oil
- 16 oz. shredded mozzarella cheese
- 2 cups of ricotta cheese
- 1/2 cup Parmesan cheese, grated

Note: You need a good amount of red sauce for this, I always make my own but using more than the ingredients say cant hurt and will guarantee its perfect. Garlic bread goes great with this.

Directions

1)
Preheat oven to 350 degrees. In large skillet combine green peppers and onion. Cook until ready. Stir in spaghetti sauce, tomato sauce and broth. Bring to a boil, then simmer 15 minutes.

2)
Pour 1 cup of meat sauce mixture into the bottom of a large baking dish. Top with half of the pasta. Add in the ricotta cheese and spread out evenly. Then a layer of 2 cups of mozzarella cheese and all of the Parmesan cheese. For the next layer, add 2 cups of sauce, remaining pasta and the rest pf the mozzarella cheese. Top that with the remaining sauce and add to oven. Bake in the oven for 35-40 minutes until hot and bubbly.

3) Remove from the oven and add the sliced pieces of sausage on top followed by a little more of the red sauce and serve. grate with cheese

Fresh Fried Lake Perch

Well I knew one thing about who would be playing in SB XLV and that was either the Bears or the Packers. Let's just say it wasn't who I wanted and we'll leave it at that. I do however have a recipe as a tribute to the 'sconnies headed to Dallas. We in the Great Lake's region enjoy fresh caught lake perch from our waters and Friday fish fry's are big in Wisconsin.

Ingredients

- fresh filleted lake perch
- breading for frying and oil as well

Nevada Annie's Cowboy Chili

I made this recipe one day from a classic chili cookbook. Released in 1980, Chili Madness by Jane Butel is must own material for any chili enthusiast especially those that like cooking up a big bowl on Sunday during football season. You can find the book for sale online at Amazon right HERE. I would recommend owning it as this recipe from the book won the 1978 World Championship cookoff held by the International Chili Society. LaVerne Harris aka Nevada Annie's special advice to the cook is to make sure you add the most important ingredient - "lot's of love".

Tex-Mex Brisket Tacos

I made these one night with a fully cooked brisket I got from the HEB Market in Dallas, Texas. They sell fully cooked and professionally smoked briskets down there and I have worked with a few of them over the last year. Believe it or not they are actually pretty damn edible but I would rec' using them in dishes like tacos and chili.


Easy brisket tacos can be made with these pre-cooked smoked briskets

Ingredients

- 1 Pre cooked brisket from HEB
- flour tortillas
- rice and beans
- toppings for tacos

Topping Options

Lettuce
Tomatoes
Sauteed Onion strips
Sauteed Bell Pepper strips
Roasted Poblano strips
Salsa
Guacamole
Sour Cream

Directions

1) Cook brisket according to package. When ready make sure to heat the tortillas thru and allow people to dress the tacos to their liking.
