Corned Beef Hashcakes

Well hello my friends I hope like me you plan to have a wee bit of tea this St. Patty's day and lots and lots of Guinness and Jameson to go with it. Just like last year we got a recipe for what to do with your leftover corned beef from this years celebration. I thought of this idea when I wanted to make me some potato pancakes but not in the norm, something different. I took a peak in the fridge and found some deli sliced corned beef and I was on my way. Corned Beef Hashcakes are an excellent easy next day recipe to kill that hangover and soak up the alcohol.

KingT's Corned Beef Hashcakes


-leftover corned beef, sliced thinly and chopped
-potato's grated thru a shredder
-onions grated thru a shredder
-chopped garlic
-salt & pepper
-a little egg whites or cream for binding
-butter

Note: There are no portions because you use what you have left from the corned beef, but you can easily make portions by doing 40% potato and 30% of both corned beef and onions or really anything to your liking.

Directions


Step1) Grate your potatoes and onions into a bowl and set aside


Step 2) slice your leftover corned beef thinly and then chop it up into little pieces

Step 3) Toss everything together and add the chopped garlic and salt and pepper along with 1 or 2 egg whites and form small balls with the mixture and squeeze out the potato and onion juice and form them into little slider pattys. Place them in the fridge for 10-30 minutes and 5 minutes before they come out lube up a frying pan with butter.


Step 4) When pan is nice and hot throw your hashcakes on and cook until done (10 mins a side)

Jameson Hangover Recipes

Its the end of February and so comes March and with it the start of Spring. In Chicago there can still be some cold ass weather during the start of it but just about everyone is ready to come out of hibernation and all it takes is St. Patty's day and the tourney for some March madness to happen. But what about the hangovers that come with it? they can only be beaten two ways 1) more booze or 2) lots of greasy good food and more booze. So if you need to kill that hangover with more shots of Jameson and plenty of ice cold beer than you can get back to Glascotts for more of it and a pound plus of gyros to go with it. All this while all the NCAA tourney games are on all the TVs and they have their annual St. Patty's Day Bash. Its going to be quite a fun March. The 2-2-2 Biggie Bagel

2 sausage patty's
2 fried eggs
2 slices of cheese
Your favorite steak sauce
1 onion Bagel

Its pretty simple to make, as it should be when your head is bangin'. The first thing your going to do is get the sausage patty's nice and crisp in a pan. While your doing that take your bagel and split it and toast it to desired doneness and spread steak sauce on each one. After the sausage patty's are cooked thru and crispy edged, add the eggs and fry them. When you flip the eggs add the slices of cheese on top and let them melt and proceed to build your sandwich.

The-too much-Scotch Egg

I made this up one morning after a few too many of the hard ones. I needed lots of water and something greasy and gargantuan to soak up the scotch. I could barely think about what to do and didnt want to leave and go out into the cold and all I could think about was "I had tooo much Scotch" and so the idea came. I had some leftover hard boiled eggs from a potato salad I made and a roll of Jimmy Deans spicy sausage. It was time for some spicy Scotch eggs. Its basically the famous Scottish dish "Scotch Eggs" but unlike every home in Scotland, I don't have a deep fryer in mine. I wish I did though.

Ingredients (makes one)


1 hard boiled egg
3/4 of a pound or enough sausage meat to wrap around egg
Louisiana Hot Sauce

Step 1)

^Take your hard boiled egg (shell removed) and wrap your sausage laced with hot sauce around it so it looks like the ball seen in the picture below.

Step 2)

^Fry the ball evenly on each side in a pan with some oil. It will be ready to come out when the ball looks like it does in the picture below.

^To make sure the sausage is cooked thru, place the ball in a 350 degree oven for 10 minutes. Proceed to cut it in half and eat away.

Corned Beef Hashburger

I bet alot of people around the world wake up with their worst hangover of the year on March 18th or the day after your local St. Patrick's day parade. In Chicago its always a week long celebration because we got the downtown parade one week and the southside parade the next weekend and not to mention the actual day of March 17th so its a busy week of drinking for all. Its also spring break time and every now and then the weather warms up and makes you want to go outside and hop from bar to bar doing shots of Jameson. Its a fun time but there's always consequences like a hangover that can only be beat a few ways including drinking more, partaking in other vices or eating. What's better than a greasy sandwich for breakfast to soak up all those car bombs, Jameson shots and pints of Guinness?

This is a recipe that I made by mistake. If your doing any type of corned beef dinner for St. Patrick's day and plan on having leftovers then this recipe is for you. Over the winter I had some leftover corned beef from a dinner and was hungry and also happened to have potato's, onions and peppers so I made some CBH according to my recipe. I wanted to try something different so I put the cooked, chopped potatoes, sauteed onions, peppers and diced corned beef in the Cuisinart and blended it for maybe 5 seconds and it turned out looking great for the griddle.

Only problem was I forgot to add the cream so that it would stick together. I decided I would add 1/2 stick of butter chopped down instead of the usual cream. When I blended the mixture the second time it came out looking like corned beef hash from a can. So I formed a patty and decided to create a corned beef hashburger. Trust me, this did not taste like it came from a can.

KingT's Corned Beef Hashburger

at least a pound of leftover corned beef or cooked corned beef (1/4-1/2 lb per patty)
Potato's diced somewhat small and cooked in boiling water for 3 minutes until cooked thru
1 green/red bell pepper diced
1 Jalapeno diced
1 onion diced
1/2 stick of butter
toasted bread or hamburger buns/rolls
fried egg or sunnyside up egg for on top

~Sautee onions and peppers in olive oil with salt and pepper until translucent

~Add corned beef, potatoes, onion and peppers and butter into a blender and blend until its consistent with ground beef

~form the mixture into patty's and cook the patty's on a buttered pan until each side is nice and brown and crispy (10-15 minutes turning it now and then)

~place patty on toasted bread and top with an egg done your way and another slice of toast

~enjoy
